Potato Latkes (aka potato pancakes)
4 large potatoes, peeled (c. 1 1/4 lb), or thereabouts, up to 2 lbs., by feel
(au pif)
1 medium onions
1 tablespoon chopped parseley (optional)
1 large egg beaten, or sometimes mom puts in 2 small eggs, or 2 eggs
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons of regular flour
1/2 teaspoon baking powder (levure en poudre), not baking soda
Instructions:
Peel the potatoes, put in cold water to prevent browning. Using a grater (watch your fingers!) or a food processor, coarsely grate the potatoes and the onion. Place them together in a fine mesh strainer, and squeeze out all the water over a bowl. Let the water sit. The potato starch will settle to the bottom. Carefully pour off the water and reserve the potato starch. Mix the potato and onion with the potato starch and flour. Add the egg and salt and pepper.
Heat a pan (a non-stick pan or a griddle), or frypan with a little oil. Take about 2 tablespoons of the potato mixture and form a pancake. Place on the griddle, flatten with a spatula, and cook for a few minutes until golden. Remove to paper towels to drain.
Serve with apple sauce and/or sour cream, cinnamon, etc.
